Coffee Process:
- To ensure the highest quality, only perfectly ripe cherries were selected for use. They were then subjected to a process that included UV sterilization, cleaning, and washing, before undergoing fermentation in a bioreactor.
- During this process, koji spore was added, and the cherries were fermented for 60 hours at a precisely controlled temperature of 20C. After fermentation was complete, the cherries underwent a pulping process. To prevent further oxidization during drying, the cherries were then submerged in water at 40C before being subjected to cold water at 12C.
- This thermal shock process effectively closed the pores of the parchment. The cherries were then placed in a mechanical dryer until they achieved the necessary moisture levels for storage and transportation.
